Pokud by ov\u0161em m\u011bly v\u010dely zimovat na p\u0159eh\u0159\u00e1t\u00e9m medu, um\u0159ely by, proto\u017ee po p\u0159eh\u0159\u00e1t\u00ed je med pro v\u010dely jedovat\u00fd.<\/mark> Pot\u00e9 mi vyvst\u00e1v\u00e1 zaj\u00edmav\u00e1 ot\u00e1zka, jestli je lep\u0161\u00ed konzumovat p\u0159eh\u0159\u00e1t\u00fd med nebo cukr, na kter\u00e9m v\u010dely ka\u017ed\u00fd rok p\u0159ezimuj\u00ed \ud83d\ude42<\/p>\n

Krystalizace neodmysliteln\u011b pat\u0159\u00ed k v\u011bt\u0161in\u011b \u010desk\u00fdch med\u016f a domn\u00edv\u00e1m se, \u017ee to bude i jeden z proces\u016f nastartovan\u00fd v\u010delami pro v\u011bt\u0161\u00ed stabilitu a konzervaci t\u00e9to z\u00e1zra\u010dn\u00e9 potraviny. Nutno podoktnout, \u017ee neexistuje \u017e\u00e1dn\u00fd zp\u016fsob ztekucov\u00e1n\u00ed, kter\u00fd kvalitu medu nesn\u00ed\u017e\u00ed. Dodnes nen\u00ed vy\u0159e\u0161en probl\u00e9m s rozbory pln\u011b zkrystalizovan\u00fdch med\u016f.<\/mark><\/p><\/blockquote>\n

Kdy\u017e chci produkovat med, kter\u00fd tepeln\u011b neupravuji, med po vy\u010de\u0159en\u00ed ihned st\u00e1\u010d\u00edm do balen\u00ed ur\u010den\u00e9 z\u00e1kazn\u00edk\u016fm. Dal\u0161\u00ed v\u00fdhodou jsou men\u0161\u00ed n\u00e1roky na objem skladovan\u00e9ho medu p\u0159ed pln\u011bn\u00edm, proto mohu v\u0161echen med skladovat v dra\u017e\u0161\u00edm nerezu a pot\u00e9 st\u00e1\u010d\u00edm do skla. Pro p\u0159\u00edrodu je tak\u00e9 \u0161etrn\u011bj\u0161\u00ed, kdy\u017e nemus\u00edm spot\u0159ebov\u00e1vat energii na oh\u0159\u00e1t\u00ed medu.<\/p>\n

Pastov\u00fd med<\/h1>\n

Alternativou tekut\u00e9ho medu je med pastovan\u00fd. Pastovan\u00fd med se z\u00edsk\u00e1 \u00fapravou r\u016fzn\u00fdch druh\u016f med\u016f kv\u011btov\u00fdch, jej\u00edm\u017e v\u00fdsledkem je nepatrn\u011b krystalick\u00e1 hmota, s krystalky o velikosti asi do 10 mikrometr\u016f, kr\u00e9mov\u00e9 konzistence. Nevhodn\u00e9 na pastov\u00e1n\u00ed jsou medy, kter\u00e9 krystalizuj\u00ed velice pomalu, nap\u0159. ak\u00e1tov\u00e9.<\/p>\n

Existuj\u00ed dva zp\u016fsoby, jak ud\u011blat pastov\u00fd med:<\/h6>\n

1) pouze mechanick\u00e9 rozbit\u00ed krystal\u016f p\u0159i za\u010d\u00ednaj\u00edc\u00ed krystalizaci<\/p>\n

2) \u00faprava spo\u010d\u00edv\u00e1 ve v\u00fdkyvech teplot (tzn. i oh\u0159\u00edv\u00e1n\u00ed) p\u0159i ob\u010dasn\u00e9m m\u00edch\u00e1n\u00ed<\/p>\n

Doporu\u010duji kupovat pastov\u00fd med p\u0159ipraven\u00fd pouze mechanicky. Balen\u00e9 medy se skladuj\u00ed v chladu. Pastovan\u00fd med si svoji konzistenci uchov\u00e1v\u00e1 napo\u0159\u00e1d, maxim\u00e1ln\u011b ihned po sto\u010den\u00ed ztvrdne a pot\u00e9 za p\u016fl roku je op\u011bt pastovan\u00fd. Co je p\u0159\u00ed\u010dinou tohoto jevu, nen\u00ed zn\u00e1mo.<\/p>\n

Pro zaj\u00edmavost: Jak\u00e9 jsou mo\u017enosti rozeh\u0159\u00edv\u00e1n\u00ed medu u malov\u010dela\u0159\u016f?<\/h1>\n

D\u0159\u00edve jsem se zaj\u00edmal o mo\u017enosti rozeh\u0159\u00edv\u00e1n\u00ed, ale zjistil jsem, \u017ee \u017e\u00e1dn\u00fd nen\u00ed ide\u00e1ln\u00ed a \u017ee jde o zbyte\u010dnost. Sv\u00e9 z\u00e1kazn\u00edky vzd\u011bl\u00e1v\u00e1m, co je kvalitn\u00ed med. Oni po ochutn\u00e1n\u00ed pochop\u00ed a zm\u011bn\u00ed n\u00e1zor.<\/p>\n

Skoro v\u0161echny medy d\u0159\u00edve nebo pozd\u011bji zkrystalizuj\u00ed<\/mark>, a pokud je v\u010dela\u0159 chce uv\u00e9st zp\u011bt do tekut\u00e9ho stavu, mus\u00ed pou\u017e\u00edt ,,\u0161etrn\u00e9“ metody.<\/h3>\n

Producenti, velc\u00ed \u00ed mal\u00ed, med\u016f jsou kv\u016fli popt\u00e1vce skoro povinni med rozeh\u0159\u00edvat<\/strong>, u lid\u00ed p\u0159evl\u00e1d\u00e1 n\u00e1zor, \u017ee med je zcukernat\u011bl\u00fd \u2013 co\u017e nen\u00ed pravda, a \u017ee je to med \u0159epkov\u00fd, kter\u00fd nen\u00ed kvalitn\u00ed. Proto n\u011bkte\u0159\u00ed v\u010dela\u0159i med r\u016fzn\u00fdmi zp\u016fsoby ztekucuj\u00ed. Nej\u010dast\u011bji malov\u010dela\u0159i ztekucuj\u00ed med v medn\u00e9 komo\u0159e (uteplen\u00fd prostor, vyh\u0159\u00edvan\u00fd nap\u0159. \u017e\u00e1rovkami a vzduch je poh\u00e1n\u011bn ventil\u00e1torem). Konev se v medn\u00e9 komo\u0159e ztekucuje minim\u00e1ln\u011b 2 dny a tato del\u0161\u00ed doba ztekucov\u00e1n\u00ed medu neprosp\u00edv\u00e1.<\/p>\n

Dal\u0161\u00ed, asi nej\u0161etrn\u011bj\u0161\u00ed metoda, ztekucov\u00e1n\u00ed je pomoc\u00ed ponorn\u00e9 spir\u00e1ly, kter\u00e1 se polo\u017e\u00ed na povrch medu a samovoln\u011b se proh\u0159\u00edv\u00e1 a\u017e na dno konve. Nejl\u00e9pe je spir\u00e1la opat\u0159ena termostatem a v p\u0159\u00edpad\u011b vysok\u00e9 teploty se vypne. <\/p>\n

Dal\u0161\u00ed zp\u016fsob m\u016f\u017ee b\u00fdt oh\u0159\u00e1t\u00ed konve ve vodn\u00ed l\u00e1zni, ale p\u0159i t\u00e9to metod\u011b se h\u016f\u0159e ohl\u00edd\u00e1 teplota vody a tak\u00e9 se m\u016f\u017ee zv\u00fd\u0161it obsah vody v medu z okoln\u00ed p\u00e1ry.<\/p>\n

Tyto t\u0159i \u00fa\u010dinn\u00e9 metody ztekucov\u00e1n\u00ed medu o v\u011bt\u0161\u00edm objemu pou\u017e\u00edvaj\u00ed drobn\u00ed producenti medu. Profesion\u00e1ln\u00ed v\u010dela\u0159i maj\u00ed speci\u00e1ln\u00ed p\u0159\u00edstroje s oh\u0159evem vody a mechanick\u00fdm m\u00edch\u00e1n\u00edm. Ztekucov\u00e1n\u00ed se mus\u00ed prov\u00e1d\u011bt t\u011bsn\u011b p\u0159ed prodejem medu, proto\u017ee med po n\u011bjak\u00e9 dob\u011b (podle druhu) op\u011bt zkrystalizuje. <\/strong>Opravdu nevhodn\u00e9 je rozeh\u0159\u00edv\u00e1n\u00ed medu v mikrovlnn\u00e9 troub\u011b. Vlny se nepravideln\u011b odr\u00e1\u017e\u00ed od n\u00e1doby a t\u00edm vznikaj\u00ed m\u00edsta, kde je teplota v\u00fdrazn\u011b vy\u0161\u0161\u00ed ne\u017e v ostatn\u00edch m\u00edstech a zadruh\u00e9 samotn\u00e9 vlny ni\u010d\u00ed prosp\u011b\u0161n\u00e9 l\u00e1tky v medu. Opakovan\u00e9 rozeh\u0159\u00edv\u00e1n\u00ed je naprosto nep\u0159\u00edpustn\u00e9.<\/mark><\/p>\n

Dle osobn\u00ed zku\u0161enosti mohu doporu\u010dit med zkrystalizovan\u00fd. Tento med si nejl\u00e9pe uchov\u00e1 cenn\u00e9 l\u00e1tky. Jedn\u00e1 se p\u0159edev\u0161\u00edm o aktivitu enzym\u016f – tento parametr se sleduje pomoc\u00ed obsahu HMF (obsah HMF \u00fam\u011brn\u011b stoup\u00e1 s klesaj\u00edc\u00ed aktivitou enzym\u016f).
